Description

These delicious and easy-to-make Pizza Pockets feature a soft, homemade dough filled with classic pizza sauce, melted cheese, and your choice of vegetables. Baked to golden perfection, they make a perfect snack or light meal that’s both comforting and customizable.

Ingredients

Dough

  • 1 1/4 cups self-rising flour (160g)
  • 3/4 cup Greek yogurt (180g)

Filling

  • 1/4 cup pizza sauce
  • 1/2 - 3/4 cup shredded cheese (such as mozzarella)
  • 1/2 cup finely chopped vegetables of choice (e.g., bell peppers, onions, mushrooms)

Finishing

  • 1 tablespoon unsalted butter, melted
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat and Mix Dough: Preheat your oven to 400°F (200°C). In a mixing bowl, combine the self-rising flour and Greek yogurt. Stir initially with a spoon, then use your hands to bring the dough together. It may start dry and crumbly, but continue mixing until it forms a cohesive ball.
  2. Knead the Dough: Transfer the dough onto a lightly floured surface and knead it for several minutes until smooth and elastic. If the dough is too sticky, sprinkle with additional flour as needed.
  3. Divide and Roll: Divide the dough into 4 or 6 equal balls. Using a floured rolling pin, roll each ball out to approximately 1/4 inch thickness. Place the rolled dough onto a baking sheet lined with parchment paper.
  4. Add Filling: Spread about a tablespoon of pizza sauce on one half of each dough circle, leaving a border around the edge. Sprinkle shredded cheese over the sauce, then scatter finely chopped vegetables or other preferred pizza toppings.
  5. Seal the Pockets: Fold the other half of the dough over the filling to create a half-moon shape. Press the edges firmly together using your fingers or a fork to seal the pockets completely.
  6. Brush and Season: Brush the tops of each pizza pocket with melted unsalted butter or oil. Sprinkle dried oregano and garlic powder evenly over the tops for added flavor.
  7. Bake: Place the baking sheet in the preheated oven and bake for 18-20 minutes, or until the crusts turn golden brown and cooked through.
  8. Cool and Serve: Remove the pizza pockets from the oven and let them cool for a few minutes as the filling will be hot. Serve warm with extra pizza sauce for dipping and enjoy!

Notes

  • You can use regular self-rising flour or make your own by adding baking powder and salt to all-purpose flour.
  • Greek yogurt provides moisture and helps create a tender dough but avoid using flavored yogurts.
  • Feel free to customize the filling with meats, different cheeses, or more vegetables to suit your taste.
  • For a crispier crust, bake the pockets on a preheated pizza stone or baking steel if available.
