Ingredients

Sauce

  • 2 tablespoons mayonnaise
  • 1 tablespoon barbecue sauce

Meatloaf Filling

  • 1 tablespoon olive oil
  • 2 slices leftover meatloaf (about 1 inch thick each)
  • 2 slices thick processed cheese or your favorite variety
  • 1 tablespoon water
  • Thinly sliced red onion (to taste)
  • Yellow mustard (to taste)

Bread

  • 4 slices sandwich bread (your favorite variety)


Instructions

  1. Prepare barbecue mayo: In a small mixing bowl, whisk together the mayonnaise and barbecue sauce until well combined. Set aside for later use.
  2. Cook meatloaf slices: Heat olive oil in a skillet over medium-low to medium heat. Add the leftover meatloaf slices and cook for 3 to 5 minutes on each side until they develop a slightly golden brown crust and are heated through.
  3. Melt cheese: Fold each slice of cheese to create a thicker layer and place it on top of each meatloaf slice in the skillet. Add 1 tablespoon of water to the skillet and cover with a lid. Allow the steam to melt the cheese for about 30 seconds to 1 minute. Then remove from heat and transfer the meatloaf slices with melted cheese onto a plate.
  4. Toast bread and spread sauce: Toast the bread slices to your preferred level of crispness. Evenly spread the prepared barbecue mayo over one side of all four bread slices.
  5. Assemble sandwiches: On two of the bread slices with the barbecue mayo side facing up, place a meatloaf slice topped with melted cheese. Add thinly sliced red onion on top of the meatloaf, then drizzle with yellow mustard to taste. Cover each with the remaining two bread slices, barbecue mayo side down, to form the sandwiches.
