Description

These cheeseburger meatballs are juicy, flavorful bites of seasoned ground beef filled with melty cheddar cheese and a blend of savory spices. Paired with a creamy, tangy mini mac sauce made from mayonnaise, ketchup, dill pickles, and Dijon mustard, this appetizer or main dish perfectly captures the essence of a classic cheeseburger in every delicious bite.

Ingredients

Cheeseburger Meatballs

  • 1 pound Ground Beef
  • ½ cup Shredded Mild Cheddar Cheese
  • ¼ cup Panko Breadcrumbs
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 teaspoon Beef Bouillon or 1 cube
  • 2 tablespoons Water

Mini Mac Sauce

  • 4 tablespoons Mayonnaise
  • 2 tablespoons Ketchup
  • 1 tablespoon Minced Dill Pickles
  • 2 teaspoons Dijon Mustard

Instructions

  1. Prepare the Meatball Mixture: In a medium-sized bowl, combine ground beef, shredded cheddar cheese, panko breadcrumbs, garlic powder, salt, and black pepper. In a separate small dish, dissolve beef bouillon in water, then add this mixture to the meat and spices. Gently mix until just incorporated to avoid making the meat tough.
  2. Preheat and Prepare Baking Sheet: Preheat your oven to 425℉ (220℃). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup and to prevent sticking.
  3. Shape and Bake Meatballs: Form the seasoned beef mixture into 1 ½ inch diameter meatballs and place them evenly spaced on the prepared baking sheet. Bake in the preheated oven for 11 to 13 minutes until cooked through and juicy.
  4. Mix the Sauce: While the meatballs bake, combine mayonnaise, ketchup, minced dill pickles, and Dijon mustard in a small bowl to create the mini mac sauce. Stir well until smooth and creamy.
  5. Serve: Once meatballs are baked, serve them warm with the mini mac sauce on the side for dipping, enjoying the classic cheeseburger flavors in every bite.

Notes

  • Nutritional values are calculated based on one meatball serving.
  • Do not over-mix the meat mixture to keep the meatballs tender and juicy.
  • Feel free to adjust seasoning to taste, such as adding more garlic powder or cheese.
  • Panko breadcrumbs provide a lighter texture but can be substituted with regular breadcrumbs if needed.
  • The mini mac sauce can be prepared in advance and refrigerated to enhance flavors.
