Ingredients
Carrot Cake Batter
- 1/2 cup butter (melted)
- 1 cup light brown sugar (packed)
- 1 large egg
- 1 tablespoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup shredded carrots
Cheesecake Swirl
- 4 ounces cream cheese (room temperature)
- 1/4 cup granulated sugar
- 1 large egg yolk
- 3/4 teaspoon vanilla extract
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Prepare an 8x8-inch baking pan by spraying it with non-stick spray or lining it with parchment paper and lightly spraying.
- Melt Butter: Place the 1/2 cup butter in a microwave-safe bowl and microwave for 30 seconds, adding another 15 seconds if needed until fully melted.
- Make Carrot Cake Batter: In a medium bowl, combine the melted butter and 1 cup light brown sugar, mixing well. Stir in 1 large egg and 1 tablespoon vanilla extract. Add 1 cup all-purpose flour, 1 teaspoon ground cinnamon, 1/4 teaspoon baking powder, and 1/4 teaspoon salt; mix until fully incorporated. Fold in 1 cup shredded carrots and set aside.
- Prepare Cheesecake Swirl: In a separate medium bowl, beat 4 ounces of room temperature cream cheese with 1/4 cup granulated sugar using a hand mixer until smooth. Add 1 large egg yolk and 3/4 teaspoon vanilla extract, then beat until creamy and smooth.
- Assemble Layers: Spread about half of the carrot cake batter evenly into the prepared pan. Drop dollops of half the cheesecake batter over the carrot batter (do not swirl yet). Next, spread the remaining carrot cake batter on top and around the cheesecake dollops. Finally, add dollops of the remaining cheesecake batter on top.
- Create Swirl Effect: Using a knife or skewer, gently swirl the batters together to your desired effect.
- Bake: Bake in the preheated oven for 35-40 minutes, until the edges are golden brown and the center has only a slight jiggle.
- Cool and Store: Allow the bars to cool completely in the pan before cutting into squares. Store leftovers in an airtight container refrigerated.
