Ingredients
Cupcakes
- 3/4 cup butter
- 1 cup water
- 3 large eggs
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 1/2 cups sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
Buttercream Frosting
- 1 cup unsalted butter (softened)
- 4 cups powdered sugar
- 2 tsp vanilla extract
- 2 TBS milk
- Red food coloring
- Orange food coloring
Garnish
- 1 bag pretzel sticks
- 24 mini marshmallows
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line 24 muffin tins with paper liners to prepare for baking.
- Melt Butter and Warm Water: Combine 3/4 cup butter and 1 cup water in a small saucepan and heat until the butter is fully melted. Remove from heat.
- Prepare Wet Ingredients: In a small bowl, whisk together the eggs, sour cream, and 1 teaspoon vanilla extract until smooth.
- Mix Dry Ingredients: In a stand mixer bowl, combine the flour, granulated sugar, cocoa powder, baking soda, baking powder, and salt. Mix well to evenly distribute all ingredients.
- Combine Wet and Dry Ingredients: Gradually add the melted butter and water mixture to the dry ingredients and mix lightly. Then add the egg and sour cream mixture, mixing until all ingredients are well incorporated and the batter is smooth.
- Fill Cupcake Liners: Pour about 1/4 cup of batter into each lined muffin tin, filling each about two-thirds full to allow room for rising during baking.
- Bake Cupcakes: Bake in the preheated oven for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean. Remove from oven.
- Cool Cupcakes: Let the cupcakes cool in the pans for 5 minutes before removing them. Transfer cupcakes to a wire cooling rack and allow them to cool completely before frosting.
- Prepare Buttercream Frosting: Beat 1 cup softened unsalted butter until light and fluffy. Gradually add 4 cups powdered sugar and continue beating until smooth and with a good piping consistency.
- Add Vanilla and Milk: Add 2 teaspoons vanilla extract and 2 tablespoons milk to the frosting. Beat again until smooth and nicely pipable.
- Color the Frosting: Divide the frosting equally into two bowls. Add red food coloring to one bowl and orange food coloring to the other, mixing each until the color is uniform.
- Fill Piping Bag: Place orange frosting on one side of a piping bag and red frosting on the other side to create a dual flame effect when piped.
- Assemble Campfire: Place a small dab of frosting in the center of each cupcake. Break pretzel sticks in half and insert six pieces per cupcake with the broken end in the frosting and the other end pointing outward, mimicking wood logs.
- Create the Flames: Swirl the red and orange frosting over the ends of the pretzels in the center of each cupcake creating the appearance of a campfire flame.
- Top with Marshmallow 'Toasts': Place a mini marshmallow on the end of a pretzel stick to resemble a marshmallow on a roasting stick. Lay this atop the frosting flame to complete the campfire look.
Notes
- Ensure cupcakes are completely cooled before frosting to prevent melting the buttercream.
- You can adjust the intensity of the frosting colors by adding more or fewer drops of food coloring.
- If you don’t have a piping bag with two openings, you can pipe one color, clean the bag, then pipe the other color for a layered flame effect.
- For a dairy-free version, substitute butter and sour cream with dairy-free alternatives and ensure powdered sugar is vegan if needed.
- Store cupcakes in an airtight container for up to 3 days for best freshness.
