Description

Delicious and nutritious Gluten Free and Paleo Brownie Protein Bites that are easy to make and perfect for a healthy snack. These no-bake bites combine Medjool dates, sunflower seed butter, protein and cocoa powder for a rich, chocolatey treat with a chewy texture. Lightly dipped in melted dark chocolate, they’re perfect for on-the-go energy boosts or a guilt-free dessert.


Ingredients

Filling

  • 1 cup Medjool dates (about 13 dates), pitted
  • 1/3 cup sunflower seed butter
  • 1 tsp vanilla extract
  • 1/3 cup protein powder (any preferred flavor)
  • 1/4 cup cocoa powder
  • Pinch of salt

Chocolate Coating

  • 1/2 cup dark chocolate
  • 1/2 tsp coconut oil


Instructions

  1. Soften the Dates: Remove the pits from your Medjool dates and soak them in hot water for 5 minutes to soften. This makes them easier to blend and gives the bites a chewy texture.
  2. Blend Initial Ingredients: Drain the soaked dates and place them into a food processor with the sunflower seed butter and vanilla extract. Blend until the mixture becomes a thick, sticky caramel-like consistency.
  3. Add Remaining Filling Ingredients: Add the protein powder, cocoa powder, and a pinch of salt to the mixture. Blend again, stopping to scrape down the sides as needed to ensure everything is evenly combined.
  4. Form Balls: Scoop out the dough using about one tablespoon per ball and roll into bite-sized balls.
  5. Chill (Optional): Place the balls on a lined baking sheet and freeze for at least 30 minutes if you want a firmer texture before dipping in chocolate.
  6. Melt Chocolate: In a small microwavable dish, combine the dark chocolate and coconut oil. Melt on high in 20-30 second intervals, stirring between each until fully melted and smooth.
  7. Coat the Bites: Dip each chilled ball one at a time into the melted chocolate and place back on the lined baking sheet to set. Allow the chocolate to firm up before serving.

Notes

  • You can substitute any nut or seed butter if sunflower seed butter is not available.
  • Use your preferred flavor of protein powder - vanilla or chocolate work best.
  • If you prefer a vegan option, choose vegan protein powder and dark chocolate that is dairy-free.
  • These bites can be stored in an airtight container in the freezer or refrigerator for up to 1 week.
  • The chocolate coating step is optional; the bites are delicious even without it.
