Description

This Braised Beef Chuck Roast is a tender, flavorful slow-cooked dish perfect for tacos, sandwiches, and more. The chuck roast is generously seasoned, slow-braised with garlic and onions, then finished in a high-heat oven to create deliciously crispy bits, enhancing the texture and flavor. Ingredients

Beef and Aromatics

  • 3½-4 lb chuck roast, patted dry with paper towels
  • 6 cloves garlic, peeled and cut lengthwise in half
  • 1 large red onion, thinly sliced into half moons

Seasonings and Liquids

  • About 3 Tbsp kosher salt
  • About 1 tsp freshly ground black pepper
  • ¼ cup water


Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 325°F (165°C). Arrange the thinly sliced red onion in half-moon shapes on the bottom of a baking dish to serve as a flavorful bed for the roast.
  2. Prepare Chuck Roast: Use a paring knife to cut several slits into the long, flat sides of the chuck roast. Insert halved garlic cloves into these slits to infuse the meat with garlic flavor. Season the roast very generously on all sides with about 3 tablespoons kosher salt and 1 teaspoon freshly ground black pepper. Place the seasoned roast on top of the onion slices in the baking dish.
  3. Slow Cook the Roast: Pour ¼ cup of water around the roast into the baking dish to maintain moisture during cooking. Cover the dish tightly with aluminum foil to trap steam and heat. Transfer the dish to the preheated oven and cook for 3½ to 4 hours until the meat is very tender and easily shreds with a fork.
  4. Shred and Crisp the Meat: Carefully remove the roast from the dish and transfer to a large cutting board. Use two forks or tongs to shred the beef finely. Return the shredded meat to the baking dish and toss it together with the cooked onions and pan juices to meld flavors. Increase the oven temperature to 425°F (220°C) and cook the shredded beef uncovered for 20 minutes to develop crispy, caramelized edges. Serve immediately and enjoy!
