These homemade Blueberry Biscuits are soft, buttery, and bursting with fresh blueberries, baked to golden perfection. Brushed with sweet honey butter, they make a delightful breakfast or snack, combining tender crumb with luscious fruit flavor in every bite.
Ingredients
Biscuits:
- 11 tablespoons unsalted butter, cold and divided
- 3 cups all-purpose flour
- ½ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- 1 ¼ teaspoons fine sea salt
- 1 ½ cups fresh blueberries
- 1 ⅔ cups cold buttermilk
Honey Butter:
- 2 tablespoons unsalted butter
- 1 tablespoon honey
- Pinch of salt
Instructions
- Preheat the oven and prepare baking pan: Heat oven to 400°F. Place 1 tablespoon of butter in an 8x8-inch baking pan and put it in the oven for 3-5 minutes until melted. Brush the melted butter over the bottom and sides of the pan, then set aside.
- Prepare cold butter: Cut remaining 10 tablespoons of butter into small pieces and keep cold until ready to use.
- Combine dry ingredients and incorporate butter: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Add cold butter pieces and toss with the flour mixture. Use fingertips to smash butter into flat, irregular pieces, creating a crumbly texture.
- Add blueberries and buttermilk: Gently toss in fresh blueberries, then stir in cold buttermilk until dough holds together with no dry flour pockets.
- Transfer and shape dough: Spread dough evenly into the prepared baking pan using a spatula, pressing into corners for even thickness.
- Score the dough: Lightly spray a bench scraper with nonstick spray and score the dough into 9 equal squares without cutting through completely.
- Bake the biscuits: Bake for 40-45 minutes until biscuit tops are browned and a paring knife inserted in the center biscuit comes out clean. Let cool 5 minutes.
- Make honey butter: Combine 2 tablespoons butter, honey, and a pinch of salt in a small microwave-safe bowl. Microwave for 30-60 seconds until melted, then stir well.
- Finish and serve: Turn biscuits out onto a baking sheet, flip them onto a wire rack so tops face up. Brush honey butter evenly over biscuits. Cool 10 minutes before cutting along scored lines with a serrated knife. Serve warm.
