Instructions
- Preheat the Oven: Adjust your oven rack to the middle position and preheat the oven to 350°F (175°C) to ensure even baking.
- Prepare the Muffin Tin: Line a 12-cup muffin tin with silicone or paper liners to prevent sticking and make cleanup easier.
- Blend Ingredients: In a blender, combine the ripe bananas, oats (except for the extra 2 tablespoons), eggs, olive oil, maple syrup, baking powder, baking soda, cinnamon, salt, vanilla extract, and Greek yogurt. Blend until the mixture is completely smooth, scraping down the sides as needed for an even batter.
- Fill Muffin Liners: Pour the batter evenly into each muffin liner, filling them about three-quarters full. Sprinkle the remaining 2 tablespoons of oats on top of each muffin for added texture and a rustic look.
- Bake the Muffins: Place the muffin tin in the preheated oven and bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
