Description

This delicious Birria Tacos recipe features tender, slow-cooked chuck roast simmered in a flavorful broth made with ancho chilies, aromatic spices, and herbs. The meat is shredded and served inside corn tortillas dipped in the rich consommé, then pan-fried with shredded cheese for a crispy, melty taco that's packed with savory goodness. The consommé is served on the side as a dipping broth to complete this authentic Mexican street food experience.


Ingredients

Meat and Broth

  • 2-3 lbs. chuck roast
  • 1 tbsp canola oil
  • 2 dried ancho chili pods
  • 5 cups chicken stock
  • 1 tsp reduced sodium beef base
  • 4 cups water
  • 1 cinnamon stick
  • 2 orange peels
  • 5 bay leaves
  • 2 tsp kosher salt
  • ½ tsp marjoram
  • 1 tsp dried oregano
  • 1 large onion, chopped
  • 4 large garlic cloves, chopped
  • 1 tbsp tomato paste
  • 1 tbsp white vinegar
  • 2 chipotle peppers

For Assembly

  • Corn tortillas
  • Shredded cheese (dairy free preferred)
  • Lime wedges (for serving)


Instructions

  1. Preheat and Prepare Dutch Oven: Preheat the oven to 325°F (163°C). Heat a Dutch oven over medium heat and add the canola oil.
  2. Season and Sear the Meat: Season both sides of the chuck roast generously with salt and pepper. Place it in the hot Dutch oven and sear until a dark brown crust forms on both sides. Remove and set aside.
  3. Sauté Aromatics and Herbs: Add the chopped onions, garlic, marjoram, oregano, tomato paste, and herbs to the pot. Toast them for a couple of minutes until fragrant.
  4. Combine Broth Ingredients: Add the chicken stock, beef base, water, cinnamon stick, orange peels, bay leaves, chipotle peppers, and canned ancho chiles to the pot. Stir to combine all ingredients, then return the seared chuck roast to the pot.
  5. Oven Cook the Beef: Bring the liquid to a boil on the stovetop, then cover the pot and transfer it to the preheated oven. Cook for 3 to 5 hours until the beef is fork tender and easily shredded.
  6. Rest and Shred the Beef: Remove the beef from the pot and let it rest for a few minutes. Meanwhile, strain the cooking liquid to remove the cinnamon stick, orange peels, and bay leaves. Stem the ancho chilies and add the strained liquid to a blender. Blend until smooth, being cautious of steam when blending hot liquids.
  7. Simmer Consommé: Pour the blended sauce back into the pot and warm it gently on low heat to make the consommé for dipping.
  8. Assemble the Tacos: Dip a corn tortilla into the consommé, then place it on a heated frying pan or griddle over medium heat. Add a layer of shredded beef and shredded dairy-free cheese. Fold the tortilla over and cook until the other side is warmed through and the cheese has melted.
  9. Serve: Serve the birria tacos hot with lime wedges on the side and small cups of the beef consommé for dipping. Enjoy the rich flavors and tender meat!
