Delicious and wholesome Banana Breakfast Cookies made with oats, peanut butter, and ripe bananas. These quick and easy cookies are perfect for a nutritious morning treat or a healthy snack, featuring optional chocolate chips and warm cinnamon for extra flavor.
Ingredients
Dry Ingredients
- 1 1/2 cup oats
- ¼ teaspoon salt
- ¼ teaspoon cinnamon (optional)
Wet Ingredients
- 2 over ripe mashed bananas
- ½ cup peanut butter
- 1 teaspoon vanilla extract (optional)
Add-ins
- ½ cup chocolate chips (optional, + 2 tablespoons for topping)
Instructions
- Preheat the oven: Preheat your oven to 350 degrees Fahrenheit. Line a sheet pan with parchment paper and set aside to prepare for baking the cookies.
- Mix ingredients: In a mixing bowl, combine the oats, mashed bananas, peanut butter, cinnamon, and salt. Mix everything together thoroughly using a rubber spatula. Stir in ½ cup of chocolate chips if using, and mix again to distribute evenly.
- Shape cookies: Divide the dough into seven portions and place them on the prepared parchment-lined sheet pan. Press down on each portion to form cookie shapes about ½ inch thick. Optionally, top each cookie with extra chocolate chips for added texture and flavor.
- Bake the cookies: Bake in the preheated oven for 8-10 minutes until they are set and slightly golden. Remove from the oven and allow the cookies to cool on the pan before serving to let them firm up. Enjoy your healthy breakfast cookies!
Notes
- Use overripe bananas for the best natural sweetness and moisture.
- Optional cinnamon and vanilla add warm flavors but can be omitted if preferred.
- The cookies can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
- Chocolate chips are optional and can be substituted with nuts, dried fruit, or left out altogether for a simpler cookie.
- Pressing the cookies to about ½ inch thickness ensures they bake evenly and hold their shape.
