Ingredients
Sauce Ingredients
- 1/3 cup balsamic vinegar
- 2 Tbsp. honey
- 2 Tbsp. oil (avocado or olive oil)
- 2 garlic cloves, minced
- 1 tsp. Italian seasoning
- 1 Tbsp. Dijon mustard
- Kosher salt and fresh black pepper, to taste
Tomato and Cheese Mixture
- 8 oz. grape tomatoes, halved
- 8 oz. fresh mozzarella balls (ciliegine or pearls)
- 2 Tbsp. finely chopped fresh basil
- Kosher salt and fresh black pepper, to taste
Chicken
- 2 lb. boneless, skinless chicken breasts, pounded to even thickness
- 2 Tbsp. avocado oil or other high-heat oil
- Kosher salt and fresh black pepper, to taste
Instructions
- Prepare the sauce: In a bowl, whisk together balsamic vinegar, honey, oil, minced garlic, Italian seasoning, and Dijon mustard. Season with kosher salt and fresh black pepper to taste. Set this flavorful glaze aside.
- Mix tomatoes and cheese: In another bowl, gently toss together the halved grape tomatoes, fresh mozzarella balls, and finely chopped basil. Season lightly with salt and pepper, and set this fresh mixture aside.
- Preheat the oven: Set your oven to 400 degrees Fahrenheit to prepare for baking the chicken.
- Sear the chicken: Heat the avocado oil in a large oven-safe skillet over medium-high heat until shimmering. Season chicken breasts with salt and pepper, then add them to the skillet in a single layer. Sear each side for 1-2 minutes until lightly golden brown. Pour in the balsamic sauce and bring it quickly to a simmer, scraping up any browned bits with a wooden spoon for extra flavor.
- Add topping and transfer to oven: Remove the skillet from heat and evenly spread the tomato and mozzarella mixture over the chicken breasts.
- Bake until cooked through: Place the skillet uncovered into the preheated oven and bake for 18-23 minutes, or until the chicken reaches an internal temperature of 165°F. Once done, remove the pan from the oven and let the chicken rest for 5 minutes prior to serving.
Notes
- Pounding the chicken breasts to even thickness helps them cook evenly and remain juicy.
- Use an oven-safe skillet such as cast iron or stainless steel to transition from stovetop to oven seamlessly.
- For extra flavor, you can add a splash of chicken broth to the sauce when simmering.
- To make this keto-friendly, ensure the honey quantity is minimal or substitute with a low-carb sweetener.
- Leftover chicken can be refrigerated for up to 3 days and reheated gently to maintain moisture.
