Ingredients

Dressing

  • ¼ cup fresh lemon juice (about 2 lemons)
  • ¼ cup extra-virgin olive oil

  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Salad

  • ½ cup finely diced red onion
  • 2 (15-ounce) cans chickpeas (drained and rinsed)
  • 1 large tomato (finely diced)
  • 1 small green bell pepper (finely diced)
  • ½ cup chopped fresh parsley
  • ¼ cup chopped fresh mint


Instructions

  1. Make the dressing: In a large bowl, whisk together the fresh lemon juice, extra-virgin olive oil, ground cumin, salt, and black pepper until smoothly combined, creating a bright and flavorful dressing base.
