Ingredients

Salmon Meatballs

Avocado Dip

  • 1 medium-ripe avocado
  • 1 tablespoon dairy-free or regular Greek-style yogurt
  • 1 teaspoon organic lemon zest
  • 1 teaspoon organic lemon juice
  • 1 clove garlic (finely grated)
  • 1 teaspoon red chili pepper (finely chopped)
  • Sea salt and black pepper, to taste


Instructions

  1. Preheat Oven: Preheat your oven to 180ºC (350ºF) and line a baking sheet with parchment paper to prepare for baking the meatballs.
  2. Prepare Meatball Mixture: Place the cooked salmon in a large bowl and lightly mash it with a fork. Add almond flour, lemon zest, chopped basil leaves, and grated garlic, then mix well. Incorporate the egg and blend all ingredients until combined. Adjust the mixture with olive oil if dry or almond flour if too wet. Season with sea salt and black pepper to taste.
  3. Form Meatballs: Shape the mixture into even-sized meatballs using your hands or an ice-cream scoop and arrange them evenly on the prepared baking tray.
