Ingredients
Salmon
- 6 pieces fresh salmon (about 2 inches wide / 4 ounces each)
- 1 tablespoon fresh dill, chopped
- Olive oil, for brushing
- Salt and pepper, to taste
Creamy Dill Sauce
- 1/3 cup sour cream
- 2 tablespoons mayonnaise
- 1 tablespoon fresh dill, chopped
- 1 tablespoon capers, chopped
- 1 teaspoon Dijon mustard
- Juice and zest of 1/2 lemon
- Salt and pepper, to taste
Instructions
- Make the Sauce: In a bowl, whisk together the sour cream, mayonnaise, chopped dill, chopped capers, Dijon mustard, lemon juice, and lemon zest. Season with salt and pepper to taste. Let the sauce sit at room temperature while preparing the salmon to allow the flavors to meld.
- Preheat the Oven: Set your oven to 400°F (204°C) to prepare for baking the salmon.
- Prepare the Salmon: Place a wire rack on top of a baking sheet lined with aluminum foil for easy cleanup. Arrange the salmon pieces on the wire rack. Brush each piece generously with olive oil, then sprinkle salt, pepper, and chopped dill evenly over the top.
- Bake the Salmon (First Stage): Bake the salmon at 400°F for 10 minutes to start cooking gently and allow flavors to develop.
- Bake the Salmon (Second Stage): Increase the oven temperature to 450°F (232°C) and continue baking the salmon for an additional 5 to 8 minutes, until the salmon is cooked through, flaky, and slightly crisp on top.
- Serve: Plate the salmon and add a generous dollop of the creamy dill sauce over each piece. Garnish with additional dill and capers if desired. Store any leftover sauce in an airtight container in the refrigerator for 5 to 7 days.
Notes
- Use fresh dill for the best flavor in both the salmon and the sauce.
- Ensure not to overcook the salmon; it should be tender and flaky inside.
- Capers add a nice briny contrast – chop them finely for better distribution in the sauce.
- The sauce can be made ahead and refrigerated to enhance flavors.
- For cleanup ease, use aluminum foil under the wire rack on the baking sheet.
- This dish pairs well with steamed vegetables or a fresh green salad for a complete ketogenic meal.
