Description

These Baked Greek Feta Fries are crispy, golden russet potato wedges baked to perfection and topped with zesty lemon juice, fragrant garlic, oregano, fresh parsley, and crumbly feta cheese. Perfect as a flavorful appetizer or side dish, they offer a delightful balance of textures and Mediterranean-inspired flavors.

Ingredients

Potatoes

  • 4 large Russet potatoes

Oil & Seasoning

  • 6 Tablespoons olive oil (divided)
  • Kosher salt (to taste)
  • Freshly ground black pepper (to taste)

Flavorings

  • 1 lemon
  • 5 garlic cloves (minced)
  • 1 teaspoon dried oregano
  • 1 Tablespoon fresh parsley (chopped)
  • 1/2 cup feta cheese (crumbled)

Instructions

  1. Slice the Potatoes: Wash the russet potatoes thoroughly. Slice each in half lengthwise, leaving the skin on, then slice again repeatedly until you have evenly-sized fries. Consistent size ensures they cook evenly.
  2. Soak the Potatoes: Place the sliced potatoes in a large bowl of ice water and soak for 30 minutes to 1 hour. This process helps remove excess starch, which improves crispiness. After soaking, drain and pat completely dry using paper towels.
  3. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 450°F (230°C). Pour 2 tablespoons of olive oil onto a baking sheet and place it in the oven to heat the oil, which will help the fries crisp.
  4. Toss Fries with Oil and Seasonings: While the baking sheet and oil heat, drizzle the remaining 4 tablespoons of olive oil over the dried potato slices. Season with kosher salt and freshly ground black pepper. Toss well to coat all pieces evenly.
  5. Bake the Fries: Carefully remove the hot baking sheet from the oven just before the oil starts smoking. Arrange the fries in a single layer on the sheet. Return the pan to the oven and bake for 30-35 minutes, turning the fries once using a metal spatula at the 20-minute mark to promote even browning.
  6. Finish and Serve: When fries are soft inside and crispy and golden on the outside, remove from the oven. Transfer to a serving plate and immediately drizzle with juice from half of the lemon. Sprinkle minced garlic, dried oregano, chopped fresh parsley, and crumbled feta cheese over the fries. Slice the remaining half of the lemon into wedges for garnish. Adjust salt if needed, but note that feta is already salty. Serve immediately family style.

Notes

  • Soaking the potatoes is essential for extra crispiness by removing starch.
  • Use a metal spatula to turn fries for best results without breaking them.
  • The hot oil on the baking sheet helps the fries start crispy on the bottom.
  • Feta cheese adds saltiness; be mindful when adding extra salt.
  • For an even more Mediterranean flavor, consider serving with a side of tzatziki or hummus.
