Ingredients
Produce
- 2 ½ cups grape tomatoes, washed and dried
- 1/4 cup chopped fresh basil
Dairy
- 1-8 oz brick of Feta cheese
Pantry
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- 5 tablespoons olive oil
- 12 oz bow tie pasta, cooked, drained, and kept warm
Instructions
- Preheat Oven: Preheat your oven to 350°F to get it ready for baking the tomatoes and feta.
- Prepare Baking Dish: Place the grape tomatoes in a medium-sized baking dish, spreading them evenly across the bottom.
- Add Feta Cheese: Place the entire 8 oz brick of feta cheese in the center of the tomatoes in the baking dish.
- Drizzle Olive Oil and Season: Drizzle 3 tablespoons of olive oil over the tomatoes and feta. Then sprinkle the Italian seasoning and salt evenly over the top.
- Add Remaining Olive Oil: Drizzle the remaining 2 tablespoons of olive oil directly over the feta cheese to ensure it bakes creamy and soft.
- Bake: Bake in the preheated oven for 30 to 35 minutes until the tomatoes burst and the feta softens and browns slightly on top.
- Combine and Season: Remove the dish from the oven and stir the softened feta and roasted tomatoes together until well combined. Fold in the chopped fresh basil for a bright, fresh flavor.
- Toss with Pasta and Serve: Add the warm, cooked bow tie pasta into the feta tomato mixture and stir until all the pasta is evenly coated. Serve immediately while hot.
Notes
- Use good quality olive oil for the best flavor.
- Cherry or grape tomatoes work best as they burst nicely when baked.
- You can substitute bow tie pasta for penne or rigatoni if preferred.
- Serve with a side salad or crusty bread for a complete meal.
- Leftovers keep well refrigerated for up to 3 days and can be reheated gently.
