Ingredients
Vegetables
- 5 pcs cucumbers
- 2 to 3 tbsp green onion, chopped
Seasonings and Sauces
- 3 tsp salt
- 3 tsp granulated white sugar
- 2 tsp sesame seeds
- 1 tsp garlic, crushed
- 1 ½ tbsp soy sauce
- 3 tsp rice vinegar
- 3 tsp Chinese chili oil
- 1 tsp sesame oil
Instructions
- Gather Ingredients. Collect all the necessary ingredients to ensure a smooth and uninterrupted preparation process.
- Prepare Marinade. In a bowl, combine sugar, sesame seeds, crushed garlic, and chopped green onions. Stir in soy sauce, rice vinegar, Chinese chili oil, and sesame oil until the mixture is well blended. Set aside to let flavors meld.
- Prepare Cucumbers. Trim both ends off each cucumber.
- Create Spiral Cuts. Place a cucumber between two chopsticks lengthwise to prevent cutting all the way through. Make diagonal cuts lengthwise halfway through the cucumber, then flip it smooth side up and make perpendicular diagonal cuts to create a spiral effect. Repeat with all cucumbers.
- Salt and Massage. Place the cucumber spirals in a large bowl and sprinkle evenly with salt. Gently massage the salt into the cucumbers to draw out excess moisture. Let them rest for 8 to 10 minutes to soften.
- Rinse and Drain. Rinse the salted cucumbers thoroughly under cold water to remove excess salt, then drain well to avoid sogginess.
- Toss with Marinade. Pour the prepared marinade over the drained cucumber spirals and toss well to ensure they are evenly coated, allowing the flavors to absorb.
- Serve. Serve the Asian cucumber salad fresh as a crisp and flavorful side dish or appetizer. For best texture, enjoy immediately.
Notes
- Using chopsticks during slicing helps achieve the spiral cut without cutting through the cucumber completely.
- Massaging cucumbers with salt draws out excess water, making the salad crispier.
- Adjust the amount of chili oil based on your preferred spice level.
- This salad is best served fresh to maintain crunchiness but can be refrigerated for up to 1 day.
