This Apple Pie Filling Coffee Cake is a delightful treat combining the warm, comforting flavors of apple pie with the ease of a coffee cake. Featuring a crumbly buttery base and topping made from yellow cake mix, layered with sweet and spiced apple pie filling, and finished with a smooth powdered sugar glaze, this cake is perfect for breakfast, brunch, or a cozy dessert.
Ingredients
Base and Topping
- 1 box yellow cake mix (about 15.25 oz)
- 1/2 cup melted butter
- 1 tsp cinnamon (optional, for extra apple pie flavor)
Filling
- 1 can (21 oz) apple pie filling
Glaze
- 1 cup powdered sugar
- 2–3 tbsp milk (or a splash of vanilla extract for flavor)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish to prevent sticking and ensure easy removal of the cake.
- Make the Crumb Base: In a medium mixing bowl, combine the yellow cake mix with the melted butter. Optionally add 1 teaspoon cinnamon for a warm apple pie flavor. Stir until the mixture is crumbly, breaking up any lumps.
- Press Base: Take about two-thirds of the crumb mixture and firmly press it into the bottom of the prepared baking dish, forming the cake’s crust layer.
- Add Filling: Evenly spread the entire can of apple pie filling over the crumb base. You can chop the apple pieces slightly before spreading for a finer texture.
- Top Layer: Sprinkle the remaining one-third of the crumb mixture evenly over the apple pie filling, creating a crumbly topping.
- Bake: Place the baking dish in the preheated oven and bake for 30 to 40 minutes, or until the top is golden brown and the filling is bubbly and set.
- Prepare Glaze: While the cake bakes, whisk together powdered sugar and 2 to 3 tablespoons of milk (or add a splash of vanilla extract) in a small bowl until smooth and pourable.
- Glaze the Cake: After removing the cake from the oven, allow it to cool slightly or completely. Drizzle the glaze generously over the top of the warm or cooled cake for a sweet finishing touch.
Notes
- For a more pronounced apple pie flavor, do not omit the cinnamon in the crumb mixture.
- You can chop the apple pieces in the filling for a less chunky texture.
- The glaze can be customized by adding vanilla extract or even a pinch of cinnamon.
- Make sure to press the base crumb mixture firmly to avoid a crumbly bottom crust.
- This coffee cake tastes great served slightly warm or at room temperature.
