Ingredients

Bread

  • 8 thick slices of sourdough bread

Onions

  • 2 yellow onions, thinly sliced
  • 2 Tablespoons butter
  • 1 Tablespoon balsamic vinegar
  • Salt and freshly ground pepper, to taste
  • 1-2 teaspoons fresh thyme

Apples

  • 2 apples, peeled, cored and sliced
  • 2 Tablespoons butter
  • 1 teaspoon apple cider vinegar (optional)
  • 1 pinch nutmeg (optional)

Cheese

  • 2 cups (150g) gouda cheese, shredded

Other

  • Extra butter for buttering the bread slices


Instructions

  1. Caramelize the Onions: Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the thinly sliced yellow onions and cook for 5-8 minutes until softened. Stir in the balsamic vinegar and continue cooking for another 5 minutes until the onions are golden and caramelized. Add the fresh thyme, salt, and pepper, cooking for an additional minute before removing from heat.
  2. Sauté the Apples: In a separate skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the peeled, cored, and sliced apples, cooking until they are soft and slightly tender. Enhance the flavor by adding a splash of apple cider vinegar and a pinch of nutmeg if desired, then remove from heat.
  3. Assemble the Sandwiches: Butter the outside of each slice of sourdough bread generously. On the unbuttered side, layer shredded gouda cheese, caramelized onions, sautéed apples, and finish with another layer of cheese. Top with the second slice of bread, buttered side facing out.
