Description
This Almond Flour Chocolate Cake is a rich, moist, and gluten-free dessert perfect for any occasion. Made with almond flour, unsweetened cocoa powder, and sweetened naturally with maple syrup, it offers a healthier twist on traditional chocolate cake. Topped with maple whipped cream or a healthy chocolate frosting and fresh seasonal fruits, this cake is both indulgent and nutritious.
Ingredients
For the Cake
- 1 tablespoon coconut oil (to grease the pan)
- 1 ¼ cups almond flour or almond meal (5.25 oz. or 148 grams)
- ½ cup unsweetened cocoa powder (1.5 oz. or 43 grams)
- ½ teaspoon baking soda
- ½ teaspoon kosher salt
- 4 large eggs (at room temperature)
- ¾ cup + 2 tablespoons maple syrup (approximately 230 ml)
- 1 tablespoon vanilla extract
For the Topping
- 1 cup maple whipped cream or healthy chocolate frosting
- 1 cup fresh berries and other seasonal fruits
- 3-4 leaves of fresh mint (thinly sliced - julienned)
Instructions
- Prepare the Pan: Preheat the oven to 325°F (163°C). Line an 8-inch springform pan with parchment paper and generously grease it with coconut oil. Set aside to ensure the cake won’t stick after baking.
- Mix Dry Ingredients: In a medium bowl, combine almond flour, unsweetened cocoa powder, baking soda, and kosher salt. Stir until evenly mixed to ensure proper leavening and consistent flavor distribution.
- Prepare Wet Ingredients: In a separate large mixing bowl, beat the 4 room temperature eggs. Add the ¾ cup plus 2 tablespoons of maple syrup and the vanilla extract. Whisk thoroughly until the mixture is smooth and homogenous.
- Combine Wet and Dry Ingredients: Pour the wet mixture into the dry ingredients and whisk until just thoroughly combined, forming a smooth batter without lumps.
- Bake the Cake: Pour the batter into the prepared, greased pan. Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean. This step ensures the cake is fully cooked and moist.
- Cool the Cake: Remove the cake from the oven and allow it to cool on the counter for about 10 minutes. Run a knife gently around the edges to loosen the cake, then transfer it carefully onto a cake plate. Let the cake come fully to room temperature to set its texture.
- Add Toppings and Serve: When ready to serve, spread the maple whipped cream or your choice of healthy chocolate frosting evenly over the top. Decorate with fresh berries, seasonal fruits, and garnish with the julienned fresh mint leaves. Slice and enjoy this delectable treat.
