Description

Delicious and healthy Air Fryer Spinach Mushroom Stuffed Chicken Breasts featuring juicy chicken breasts filled with sautéed mushrooms, fresh spinach, and melted mozzarella cheese. This quick and easy recipe delivers a flavorful, low-carb meal perfect for weeknight dinners or meal prep.

Ingredients

For the Filling

  • 2 tablespoons Olive Oil
  • 1 teaspoon Butter (melted)
  • 2 Garlic Cloves minced
  • 10-12 Button Mushrooms (thickly sliced, approx 150 grams)
  • ½ teaspoon Italian Seasoning Blend
  • 1 Cup Spinach Leaves (loosely packed, roughly chopped)
  • ¾ cup grated Mozzarella Cheese

For the Chicken

  • 3 Chicken Breasts skinless (boneless)
  • 1 ½ Teaspoon Salt
  • 1 Teaspoon Black Pepper
  • Additional Olive Oil and Butter for brushing

Instructions

  1. Cook Mushrooms: Heat 1 tablespoon of olive oil in a pan over high heat. Add the sliced mushrooms and minced garlic, and toss them for 2-3 minutes until they start to soften.
  2. Season Mushrooms: Sprinkle ½ teaspoon salt and the Italian seasoning blend onto the mushrooms. Continue cooking for another 2-3 minutes until the mushrooms are golden brown and slightly crispy around the edges. Remove from heat and set aside in a bowl.
  3. Butterfly Chicken Breasts: Take each chicken breast and slice horizontally halfway through so it opens like a butterfly. Be careful not to cut all the way through, leaving one side intact to hold the filling.
  4. Prepare the Stuffing: Season both sides of each chicken breast with salt and black pepper. On one side, place 1-2 tablespoons of the cooked mushroom mixture, then add a handful of spinach leaves, and finally sprinkle about ¼ cup of grated mozzarella cheese.
  5. Secure the Filling: Fold the other side of the chicken breast over the filling and secure it with toothpicks to keep everything inside during cooking. Repeat for all chicken breasts.
  6. Brush with Fat and Season: Mix the remaining olive oil and melted butter and brush this mixture generously over both sides of each stuffed chicken breast. Sprinkle additional salt and black pepper on both sides for extra flavor.
  7. Cook in Air Fryer: Preheat the air fryer to 180°C (356°F). Place the stuffed chicken breasts into the air fryer basket and cook on one side for 3-4 minutes depending on size, then flip and cook the other side for another 3-4 minutes until cooked through and golden brown.
  8. Rest and Serve: Remove the chicken breasts from the air fryer and let them rest on a plate for 2-3 minutes to allow the juices to redistribute before serving.

Notes

  • Ensure chicken breasts are not too thick for even cooking; pound them slightly if needed.
  • Use fresh spinach and mushrooms for the best flavor and texture.
  • Remove toothpicks before serving to avoid accidents.
  • The cooking time might vary depending on the air fryer model and chicken breast size.
  • Leftover stuffed chicken can be stored in the refrigerator for up to 3 days.
